Chicken and Chorizo
Serves 4
This is a really quick mid- week dinner that can be cooked on the hob , slow cooker or in the oven
If you don’t like chicken thighs use breasts cut into thirds
100g or ½ chorizo ring skinned and chopped into 1 cm cubes
1 onion halved and sliced
1 tsp paprika (hot or sweet which ever you prefer)
8 skinless chicken thigh fillets halved
1 jar of tomato pasta sauce any flavour you like
½ jar roasted peppers cut into 2cm slices
½ pasta sauce jar filled with red wine or chicken stock
50g black or green olives
1 tbsp light olive oil
Heat oven to 160 degrees / pre heat slow cooker on low
Heat a saucepan or casserole and then brown the chorizo
Add the sliced onion and cook until soft – As the chorizo is high in fat no need to add oil
Add the paprika and cook for 1 minute
Remove from the pan and add some light olive oil if needed
Heat and brown the chicken thighs on all sides
Add the chorizo mix back and add pasta sauce, wine or stock and olives and bring to the boil
If cooking on the hob simmer at the lowest heat for 40 mins, or cook in the slow cooker on low for 7-8 hours or in the oven for 40 minutes
Serve with rice and vegetables
Vegetarian option – Instead of the chicken cut aubergine slices 1 cm thick brush with oil and roast in the oven at 200oc for 20 mins until brown add with the pasta sauce
