Welcome to the Recipe of the Month, where we showcase delicious and healthy recipes to help you maintain a balanced diet. Each month we will publish a new enjoyable recipe for you to try at home, with your family and friends.

We all know that a balanced diet is essential for good health, but did you know that reducing your fat intake can have significant benefits for your health? A diet that is high in saturated and trans fats can increase the risk of heart disease, stroke, and other health problems. By reducing the amount of fat in your diet, you can improve your overall health and reduce your risk of these conditions.

Tropical Fruit Salad

1 pineapple

2 mangoes

3 bananas

3 kiwi fruits

4 passion fruits

250ml orange or any tropical juice mix

45ml of rum optional

This a really easy dessert great after any meal or even a spicy meal

It’s low in calories high in fibre and vitamin C.

If you don’t fancy all the chopping you can always buy ready chopped fruit but it will be more expensive.

There are loads of you tube tutorials on how to prepare pineapple and mangos if you want to prepare it yourself

Simply chop all the fruit (minus skin) into bite sized pieces

Mix the orange juice and rum together (if using) and pour over the fruit

Give it a stir and leave to marinate for a couple of hours in the fridge.

It keeps really well for a couple of days but the banana goes a bit mushy - it still tastes great! Or alternatively do want add the banana until you are ready to get the fruit salad.
